Bufle: Launch of the Bubble-Waffle

SEEN has heard much of the phenomenon of the Asian Bubble-Waffle and thus was very keen to sample this Hong Kong import for herself. My guest and I found ourselves in a bright, buzzy bar/café with tables and plenty of counters and high stools. It’s in Rupert Street, between Soho and busy Leicester Square.

It goes like this: You can have chicken, mozzarella, pulled pork, salmon, cod, ice cream, cookies, marshmallows and sauces in any sweet or savoury combination, along with the lovely bubble-waffles which are cooked for your delectation on the spot. Breakfast options are fun with the full English on offer and a superfood option with not-the-usual-salad-suspects as constituents: burnt corn, pumpkin seed pesto, tofu lime cream… All very interesting and fresh.

We noted some robust flavour fusions going on: mozzarella and parsnip; ice cream and Oreo cookie; was that wasabi ice cream? The bubble-waffles are exactly that: waffles full of bubbles, much lighter than you might think. And don’t forget the interesting cocktail list. We started off with prosecco that was sweetly delicious and moved onto Cherry Cosmopolitans that were nicely dry and sour. The staff were just lovely, working hard amongst the enthusiastic crowd to explain the ingredients. Expect queues out the door, especially late at night.
