Adam Rawson’s World Cuisine at The George & Dragon

SEEN is very excited to announce that YBF’s 2015 ‘Chef of the Year’ Adam Rawson has launched his first extended kitchen residency at the recently renovated Victorian pub, The George & Dragon, right in the heart of Fitrovia. Adam is cooking a new popup menu inspired by his exploratory travels around the world, in search of the most exciting flavours and ingredients to bring back to London.

Adam is cooking a new popup menu inspired by his exploratory travels around the world, in search of the most exciting flavours and ingredients to bring back to London.

His award-winning burgers are of course in the menu, including 2015 ‘Slider Decider’ winner Pan Con Chicharron (aged beef, crispy pork, aji rocotto ketchup, aji Amarillo mustard and salsa criolla) and 2016’s winner Global Traveller (aged beef, gorgonzola, balsamic onions, beef, smoked cheddar, onion pickle, toasted yeast mayonnaise, stout battered onion ring and Branston), as well as a Moroccan-themed vegetarian Aubergine Zaalouk (crispy aubergine, smoked yoghurt, tomato, rose and harissa jam, wild rocket). There will also be a new special burger each month reflecting a different country’s culinary heritage under Adam’s perspective.

The menu also proposes an array of British pub classics, each with Adam Rawson’s particular and original twist: nduja and rosemary scotch egg, cider braised pork cheeks, or gorgonzola baked breaded mussels are some of the many interesting options. More British pub favourites will be coming throughout Adam’s winter residency, each with a unique interpretation.

Adam Rawson’s successful career is a result of his talent, hard work and courage. After training under some of the world’s most prestigious chefs, including Nuno Mendes, Claude Bosi and Gordon Ramsay, he proved his skills over a decade, cooking in the UK as head chef at many great London restaurants, such as White Rabbit, Lucky Chip and Pachamama. He then took the drastic decision to take a break from professional kitchens to travel the world, exploring gastronomic hotspots and discovering their hidden gems. Now Adam is sharing his culinary favourites, delighting us with dishes that make London a real world city.

As he did before in the kitchen of White Rabbit, Rawson will be working with young and talented head chef Will Dennard during this exciting kitchen residency at The George & Dragon. From Monday to Friday, this traditional, early Victorian pub, located close to Warren Street tube in Fitzrovia, offers a great range of beers from the finest brewers in London and the UK. They are even brewing their own range of cask and keg beers on site as a result of the collaboration between First of the BrewIT group, Managing Director Ray Corner and Master Brewer Tom Newman. The pub’s tap list will rotate regularly to ensure there are always interesting new beers to sample.

Could we ask for more? Great pub, great food, great beer… it sounds close to paradise. His pub popup menu is also available to order for delivery via Uber EATs. Sagardi: Pleasures of the Flesh

SEEN was reminded of what a privilege it is to meet chefs and butchers who are truly passionate and single-minded about the food they prepare and cook. Thus it was at Sagardi in Shoreditch, where the ravenous foodie press was assembled earlier this week, to witness the butchery of, and subsequent cooking over a splendid barbecue grill, of a side of ox.
